Lovely voluptuousness, truffle, licorice and red berries from the Merlot, held in check by the firm, spicy tannins of the Cabernet Sauvignon and a moderate 13% alcohol. A supple and elegant blend with exuberant dark berry fruits, good natural acidity, well-integrated and balanced. Classically understated!
Incredibly fresh and pure, white pepper and savory notes complement the berry fruit aromas. Has immense poise and presence in the mouth, but is never overwhelming. Serve with Carpaccio, meats and pastas.
We harvested our first Chardonnay grapes on the 7th of March 2006 at a very low 2 ton/ha. The fruit was in excellent condition with a very good analysis resulting in 13,5% alcohol, 1,8gm/l of residual sugar and 7gm/l of acid. The oak regime largely determines the style of wine and we believe oak should be used sparingly to ensure we express the fruit from our vineyard in the Chardonnay. Only 250 cases of what promises to be an exceptional Chardonnay will be released in January 2007.
The nose shows apricot, honey and almonds and on entry the palate is rich and sweet and the wine appears to almost evaporate on your tongue as the wonderful natural acidity balances the sweetness with a dry and long finish. Only 50% of the wine was matured in new French barriques so as to retain the freshness, minerality and delicate fruit found in our Sauvignon Blanc.
A shockingly good marriage between Old and New World Sauvignon Blanc. Upfront exotic green fruit flavors with prominent flint, chalk and minerals. The entry shows ripe fruit, the finish is dry with great length. Serve this Sauvignon Blanc with fresh fish, sushi, shellfish oysters, asparagus, artichokes, salads, Chinese and Indian food with ginger and spices work perfectly.
